Baked apples stuffed with honey, almonds and sultanas

For today’s recipe (from www.vegsoc.org) we’re going with apples and honey, which symbolise the desire for a sweet year.
And we can’t let the occasion pass without a big shout-out and thanks to Jonny of Tower of Bagel. If you haven’t tried his gorgeous three-braid challah celebration bread (or the mini versions)… get on it! There’s a vegan version too.     Ingredients

  • 4 apples
  • 50g ground almonds
  • 50g sultanas
  • 3 tbsp honey
  • 25g butter (or melted coconut oil) plus a bit extra to grease
  • TO SERVE:
  • 200g Greek yogurt or soy yogurt
  • 2 tbsp honey
  • 4 sprigs fresh thyme

    Method

  1. Preheat the oven to 200°C/gas 6.
  2. Core the apples and score the skin in a spiral.
  3. Mix the ground almonds, sultanas and honey together in a bowl.
  4. Fill the centre of each apple with the mixture and top with a knob of butter.
  5. Place the apples in a greased ovenproof dish. Spoon 4 tbsp water (or apple cider) around the base of the apples and bake in the preheated oven for 45-50 minutes until the apples are tender and fluffy.
  6. Place the Greek yogurt in a small bowl and stir in the honey.
  7. Serve the baked apples on individual plates, topped with a spoonful of Greek yogurt and a sprig of thyme to decorate.
