Sauteed green beans with tomato and onion

A lovely simple summer recipe from our very own green-fingered gardening guru Fran Halsall this week. Fran runs the Lansdowne Estate Gardening Club on Sunday mornings – community gardening workshops with Regather’s neighbours.     Ingredients

  • 1 finely sliced onion
  • 3 to 4 cloves garlic
  • 200g finely sliced green beans / French beans
  • 100g fresh tomatoes, chopped into quarters
  • small handful basil
  • 2 tbsp oil
  • salt
  • pepper
  • pinch of sugar

    Method

  1. Sauté the onion in oil on a low heat in a small-medium saucepan with the lid on.
  2. When soft and golden, add sliced/chopped beans, season with salt and pepper and replace the lid.
  3. Sauté for another 5 minutes, keeping the lid on. Add in the chopped toms, replace lid.
  4. Meanwhile finely grate the garlic and add into the pan with the sugar. Re-cover with lid.
  5. Sauté for another 3 minutes with lid on, add shredded basil leaves. Serve.
